Craig Carlson grew up in a working class family in Connecticut, never worked in a resturant.  On his first visit to Paris he knew he wanted to spend his Life here.  He decided to open up an American Style breakfast restuarant in Paris. This marvelous memoir is tells us how he over came lots of obstacles, raised cash from investors and much more. I was shocked to learn how favorable French Law was to employees, making it near impossible to get rid of a bad employee. French Law has all sorts of regulations, violate one and your business can be closed.  A very big challenge for Carlson was making sure all his employees were legal French residents.  He also had to learn what items on The Menu would make French customers come back.  He needed more than just American tourists and expats as customers.


Carlson had a lot of frustration but he ended up with three restuarants, searching for locations was a great Challenge.


Carlson had been single before coming to France.  It was gratifying to see him find true love.






With a background in journalism, Craig Carlson received a B.A. from the University of Connecticut.  After graduation, he moved to Los Angeles where he studied at the University of Southern California, receiving an M.A. in film production. After winning the prestigious John Huston Directing Award, Craig wrote and directed a short film, Wheel of Torture, which went on to win awards at the Chicago Film Festival as well as the Lucille Ball festival of comedy. In addition to being a produced screenwriter, Craig worked as a translator for Letters: Jean Renoir, a book on the famous French director.

In 2003, Craig completely shifted gears and decided to open the first American diner in Paris, France.
